Spinach & Feta Stuffed Peppers

Greek-inspired peppers stuffed with spinach, rice, and feta.

Ingredients

  • 4 bell peppers
  • 2 cups cooked rice
  • 3 oz feta, crumbled
  • 4 oz spinach, sautéed
  • 1 tbsp olive oil
  • Salt and pepper

Instructions

  1. Mix rice, feta, and spinach; season.
  2. Stuff peppers; bake at 375°F (190°C) for 25–30 min.
