High-Protein Lentil Bowls

Hearty lentil bowls with roasted veg and tahini sauce.

Ingredients

  • 1 cup dry green lentils
  • 2 cups vegetable broth
  • 2 cups mixed vegetables, roasted
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • Salt and pepper

Instructions

  1. Simmer lentils in broth until tender.
  2. Whisk tahini with lemon, salt, and water to thin.
  3. Assemble bowls with lentils, veg, and sauce.
