Eggplant Parmesan Bake

Baked eggplant layered with marinara and mozzarella.

Ingredients

  • 2 eggplants, sliced
  • 2 cups marinara
  • 1 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • Olive oil, salt, pepper

Instructions

  1. Roast eggplant slices until tender.
  2. Layer with sauce and cheese; bake until bubbly.
